- 1(4 pound) chicken
- 6tablespoonbutter
- 2/3cupwhiskey
- 5ouncebutton mushrooms
- 1shallot
- 1/2cupcream
- 1teaspooncornstarch

Heat 2 tablespoons butter in a flameproof casserole dish

Add the chicken pieces and cook over a medium heat for about 10 minutes or until golden on all sides

Pour whiskey over the chicken

Remove from the heat, cover and leave to steep for 10 minutes

Meanwhile, quarter the mushrooms and sprinkle with a few drops of lemon juice

Peel and chop the shallot

Melt the rest of the butter in a frying pan, add the mushrooms and cook, stirring occasionally, until all the liquid has evaporated
