- 3/4cupmushrooms, sliced
- 2large potatoes, grated
- 11/2 teaspoons parsley, chopped
- 1/4cupcream
- 2tablespoonolive oil

4 strips bacon, diced 1 medium onion, diced 3/4 cup mushrooms, sliced 2 large potatoes, grated 1 1/2 teaspoons parsley, chopped 1/4 cup crea

Add the onion and mushrooms and cook until just soft

Remove to a bowl and mix with the potatoes, parsley, cream and seasonings

Heat the oil in the skillet
