Place on a wire rack in a bread pan

salt and pepper to taste on both sides

Bake at 375 degrees F for 1 hour, 30 minutes on each side

Melt butter or margarine

Add Texas Pete hot sauce to butter, mixing well

With a pastry brush, brush hot sauce mixture on both sides of chicken
