Ingredients
- 4medium size ripe sliced tomatoes (the amount of cherry
- 1/4cupgood quality red wine vinegar
- 3tablespoonwater
- 2tablespoonextra virgin olive oil (or canola, vegetable oil is ok)
- 1tablespoonfresh chopped parsley
- 1teaspoondried italian seasoning (i use fresh
- 1teaspoonfinely chopped onion (i used 3 tablespoon finely chopped red
- 1finely chopped garlic clove

Whichever way you make it, it's sure to be a big hit

Enjoy! Serves: 8 4 medium size ripe sliced tomatoes (the amount of cherry tomatoes I used was by eyesight) 1/4 cup good quality red wine vin

Combine the red wine vinegar, water, oil, parsley, Italian seasonings, onion, garlic and pepper in a bowl and whisk it all together well

Pour the marinade over the tomatoes

Cover and chill for approximately 8 hours or overnight (the longer it marinates, the more intense the flavor)

Place in a decorative bowl and sprinkle with some parsley.
