- 4cucumbers, peeled leaving a few lines of peel for interest
- 1large onion, cut in half and sliced very thin

Spread out over counter

Spread sliced onions over the cukes (ratio of cukes to onions is about 2 to 1)

Season with salt and pepper

Let set on counter about 1-2 hours

Mix this cuke mixture with your hands and take handfuls and squeeze out as much liquid as you can and place in a bowl

Add approximately 1/4 cup red wine vinegar, starting out with less and add more if you need to

Add approximately 12 ounces sour cream, again adding gradually
