Ingredients
- 21/2 cups all-purpose or whole wheat pastry flour
- 2teaspoonbaking soda
- 1to 1 1/2 teaspoons salt
- 2cupwheat or oat bran
- 3/4cupchopped dried figs or pitted dates
- 1cupboiling water
- 1stick(1/2 cup) butter or margarine
- 1cupgranulated sugar

These muffins, which I made last night, are (were!) sweet, moist, fine-textured - bakery quality

2 1/2 cups all-purpose or whole wheat pastry flour 2 teaspoons baking soda 1 to 1 1/2 teaspoons salt 2 cups wheat or oat bran 3/4 cup choppe

Spray bottoms of 24 standard size (or 12 jumbo) muffin cups with non-stick spray, or line with paper baking cups

In a small bowl, stir together the flour, baking soda and salt
