- 1/3cupgranulated sugar
- 1/3cuppacked brown sugar
- 1tablespoonbaking powder
- 1teaspoonbaking soda
- 1/2teaspoonsalt
- 1teaspoonground allspice
- 1teaspoonground ginger

Combine first 8 ingredients in a large bowl, and make a well in the center of the mixture

Combine banana and next 7 ingredients (banana through egg white) in a bowl

Add to flour mixture

Stir just until moist

Spoon batter into 18 muffin cups coated with cooking spray

Bake at 400 degrees F for 18 minutes, or until done

Remove from pans immediately
