Roll meat mixture between a sheet of foil and wax paper to a 16 x 12-inch rectangle, about 1/2 inch thick

Remove top sheet of wax paper

Top with ham and cheese to within 1 inch of edges

Sprinkle with celery and parsley leaves

Roll up beginning with short edge, lifting away foil as you roll, but leaving roll on foil at the end
