- 11/2 or 2 pounds pompano, cleaned
- 1(3 pound) box kosher salt
- 1/4poundbutter
- 1/2teaspooncumin
- 2to 3 sprigs fresh cilantro, chopped
- 1lemon, quartered

Drain, rinse in cold water, drain, and pat dry

Season fish lightly inside and out

Stuff cavity with parsley or herbs

Wrap fish entirely in the romaine leaves

Place a thick layer of salt in a deep baking dish
