- 1/2cupbaking cocoa, sifted
- 1cupgranulated sugar
- 1/2cup(1 stick) unsalted butter, melted
- 16ouncebittersweet chocolate, coarsely chopped
- 11/2 cups heavy cream
- 16ouncewhite chocolate, coarsely chopped

Mix graham cracker crumbs, baking cocoa, sugar and melted butter in a bowl

Press evenly over the bottom and side of a 10-inch springform pan

Bake in the center oven rack for 5 minutes

Cool on a wire rack

Melt the bittersweet chocolate with the cream in a double boiler over hot but not simmering water, stirring to blend well
