coconut shortbread cookies

Ingredients
- 11/2 cups sifted all-purpose flour
- 1/4cupcornstarch
- 3/4cupsifted confectioners' sugar
- 1cupsoft butter (do not substitute)
- 1teaspoonvanilla (or 1/2 teaspoon vanilla extract
- 2cupfinely grated coconut
- 4dozen

1 1/2 cups sifted all-purpose flour 1/4 cup cornstarch 3/4 cups sifted confectioners' sugar 1 cup soft butter (do not substitute) 1 teaspoon

Sift flour, cornstarch, confectioners' sugar
- 6
Blend in butter and vanilla extract with your hands until dough forms (I take the easy way out and use my food processor)

Wrap and chill dough for 1 hour

Pinch off dough pieces and roll into 1 1/2-inch balls
