The iconic recipe from the Quaker Oats box: chewy, golden oatmeal cookies with crisp edges. Buttery, lightly spiced, and impossible to eat just one. Perfect with a cold glass of milk.

- 1 1/4cupmargarine
- 3/4cupsugar, brown, packed
- 1/2cupsugar, granulated
- 1egg
- 1tspvanilla
- 1 1/2cupflour, all-purpose
- 1tspbaking soda
- 1tspsalt, optional
- 1/4tspnutmeg, optional
- 1tspcinnamon
- 3cupoatmeal, uncooked

Preheat oven to 375 degrees F. Beat margarine and sugar together until fluffy. Beat in egg and vanilla. Combine flour, baking soda, salt and spices; add to margarine and sugar, mixing well.

Stir in oatmeal. Drop by rounded tablespoons onto an ungreased cookie sheet. Bake 8-9 minutes for a chewy cookie. 10-11 minutes for a crisp cookie.

Cool 1 minute on cookie sheet; remove to wire rack for cooling. Store in tightly covered container. Makes approximately 4 1/2 dozen or 54 cookies.
