1 c All-purpose flour 1 c Sugar 1/4 c Unsweetened cocoa powder 1 ts Baking powder 1/4 ts Baking soda 1/4 ts Salt 2 tb Instant espresso 3/4 c Milk 1/4 c Butter 1/2 ts Vanilla 1 Egg

- 1/4c unsweetened cocoa powder
- 1ts baking powder
- 1/4ts baking soda
- 1/4ts salt
- 2tb instant espresso
- 3/4c milk

Add espresso, milk, butter and vanilla

Beat with an electric mixer on low-speed until combined

Add egg and beat 2 minutes more

In a greased 2 quart ring mold lined with waxed paper, pour mixture

Microwave on medium high for a few minutes, then on high until done

Check doneness with toothpick

To serve, invert onto a plate
