Chocolate Mint Chip Brownies
2/3 c Sugar 1/4 c Packed fresh mint leaves or 1 1/2 tb Dried mint 1/2 c Unsalted butter 4 oz Semisweet chocolate coarsely Chopped 2 lg Eggs lightly beaten 1 t Vanilla 2/3 c Flour

- 1/4c packed fresh mint leaves or
- 11/2 tb dried mint
- 1/2c unsalted butter
- 4ozsemisweet chocolate coarsely
- 1t vanilla
- 2/3c flour
- 1/4ts salt

Combine the sugar and mint in the bowl of a food processor until the mint is pulverized Set aside

Melt the butter in a 2 quart saucepan over very low heat

Turn off the heat and add the chocolate

Set aside for 5 minutes to melt

Whisk the chocolate to smooth then stir in the mint sugar

Whisk in the eggs and vanilla

Mix together the flour and salt then stir into the chocolate mixture until evenly blended
