- 1/4cup butter
- 3medium leeks (white part onl
- 2lb(aboput 6 medium) potatoes
- 1ham bone, any size
- 1/4tsp dried thyme leaves
- 6cup chicken or beef stock or wat
- 1/2pt heavy cream

Clean leeks well and slice

Peel potatoes and slice
- 4
Add leeks, potatoes, ham bone, thyme and stock (or water) to onion

Cover and simmer until potatoes are very soft
- 6
Remove ham bone, discard

Cool potato/leek mixture slightly
- 8
Puree in a food processor or blender and return to pot
