- 6c tart apples, pared and cored
- 1/2c raisins
- 1c sugar
- 1tb butter
- 2tb flour
- 2egg yolks, well beaten
- 3egg whites

Remove from heat

drain excess liquid

Gently fold in sugar, butter, flour, 3 egg yolks, and rind and juice from lemon

Cook for 5 minutes or until thickened
