- 3tsp baking powder
- 1tsp salt
- 1/4cup sugar
- 3tbsp unsalted butter -- at room

Grease the bottoms, but not the sides, of 12 medium-sized muffin cups with the butter or margarine

Beat the egg in a large bowl with a fork

Stir in the vegetable oil and milk

Combine the flour, baking powder, salt and sugar in a small mixing bowl and stir together

Add to the egg mixture
