- 2cup flour, all-purpose
- 2cup sugar
- 1/2tsp salt
- 1tsp baking soda
- 2tsp cinnamon, ground
- 3eggs
- 11/2 c vegetable oil
- 2cup carrots, finely grated
Directions

Add eggs, oil, carrots and vanilla

beat until combined

Stir in pineapple, coconut and 1/2 cup nuts

Pour into a greased 13x9x2-inch baking pan

Bake at 350 for 50-60 minutes or until cake tests done

Frost cooled cake with Cream Cheese Frosting
