- 1/4c vegetable oil
- 1/2c brown sugar; packed
- 11/2 c all-purpose flour
- 1/2ts baking soda
- 1/2ts salt

Beat in egg whites, oil and brown sugar

Combine ingredients are moistened

Spoon into greased or paper-lined muffin until golden

Variations: May substitute honey for brown sugar and reduce the milk to 1/2 cup
