- 125g closed cup mushrooms -- quartered
- 6spring onions -- roughly chopped
- 5tbspsunflower oil
- 50g freshly grated parmesan cheese -- plus
- 1tbspfreshly grated parmesan cheese -- to garnish
- 1. measure 700ml boiling water into a bowl, then add the pota

Measure 700ml boiling water into a bowl, then add the potato mix stirring continuously

Stand for 1 minute, then beat until creamy and smooth

Leave to stand for 5-10 minutes until cool enough to handle

Finely chop the mushrooms and onions in a food processor

Heat 2 tbsp oil in a large non-stick frying pan, add the mushroom mixture and cook for 1-2 minutes until just soft

Add to the potato with the cheese and season well

Divide the mixture into eight and shape into large sausages on a floured surface
