- 3ts baking powder
- 1t cinnamon
- 11/2 c raw sweet potatoes, grated
- 2c sugar
- 21/2 c sifted cake flour
- 1/4ts salt
- 1t nutmeg

CAKE----- 1 1/2 c Cooking oil 4 ea Eggs, separated 3 ts Baking powder 1 t Cinnamon 1 1/2 c Raw sweet potatoes, grated 2 c Sugar 2 1/2 c Sift

Beat until smooth

Add egg yolks and beat well

Add dry ingredients which have been sifted together

Stir in potatoes, nuts and vanilla, beat well

Beat egg whites until stiff

Fold into mixture

Bake in 3 greased and floured 8-inch layer pans at 350 F
