- 1c cooking oil
- 3eggs
- 1t baking soda
- 11/2 ts baking powder
- 21/3 c all-purpose flour
- 1/2c soy flour

Peel zucchini, remove seeds and shred

Press firmly in measuring cup

Drain off excess water
