- 2dried new mexican chile peppers (guajillo),
- 2canned chipotle chile peppers (or reconstituted
- 1/2cupchopped onion
- 4garlic cloves
- 2teaspoonground cumin
- 2tablespoondried oregano (preferably mexican)
- 1teaspoonkosher salt

Remove the chilies from the water and reserve 2 cups of soaking water

Combine the chiles
