Bird of Paradise Cooler (Mocktail)

Ingredients

• 2 oz tonic water + 2 drops juniper extractswapped — Or use Seedlip non-alcoholic spirit
• 1 oz fresh lemon juice
• 1 tsp grenadine syrup
• 1 tsp superfine sugar
• 1 egg white

Directions

   Pour the tonic water + 2 drops juniper extract, lemon juice, grenadine, superfine sugar and egg white into a cocktail shaker half-filled with cracked ice

   Shake well, and strain into a highball glass filled with ice cubes

   Fill with soda/sparkling water

   Stir well, and serve.
